Why does your chicken say “air-chilled”?

Because how chicken is cooled after processing can make a difference.

Water-chilled chicken is cooled in cold water, which can allow the meat to absorb some of that water.

Air-chilled chicken is cooled using cold, circulating air instead. There’s no water bath, so there’s no added water absorbed during the chilling process.

At Northern Raised, our organic chicken from Ahrens Family Farm is air-chilled after processing, part of the straightforward, considered approach that has defined this six-generation Ontario farm for decades.

Not all pork comes from the same kind of pig.

Heritage pork comes from traditional breeds that have been preserved over generations, rather than the highly standardised breeds commonly used in industrial pork production.

Why does the breed matter?

Heritage breeds can differ in marbling, fat distribution, texture and flavour, which can make for a very different eating experience.

Some farming traditions are measured in years. The Ahrens family measures theirs in generations.

For six generations, the Ahrens family has farmed the same land near Peterborough, Ontario — more than 130 years of farming rooted in the same place.

They committed to organic chicken farming more than 30 years ago, long before “organic” became a selling point. They did it because they believed it was simply the right way to farm.

Today, every bird is free-range and certified organic, raised without antibiotics, synthetic hormones or chemical inputs.

The chickens are also air-chilled after processing, rather than water-chilled, for a clean, consistent product without absorbed moisture.

Grass-fed vs. grass-finished: what’s the difference?

“Grass-fed” tells you an animal was fed grass at some point in its life. It doesn’t necessarily tell you what it was fed during the finishing stage.

Grass-finished means the animal stayed on a grass-based diet through finishing, rather than being switched to a grain-based finishing diet.

At Northern Raised, we’re specific: our beef is 100% grass-fed and grass-finished.

Because when you’re choosing meat based on how it was raised, the details matter.
