Mushroom Ragi Soup
Ingredients
1 tsp cooking oil
4-5 cloves garlic, minced
2 onions, finely chopped
400g mushrooms, sliced
¼ cup ragi (finger millet) flour
1 vegetable stock cube
Spices to taste: thyme, oregano, black pepper, and salt
Water (approx. 3-4 cups, divided)
200g firm tofu (or low-fat paneer), cubed
Instructions
1. Heat the oil in a large pan or pot over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
2. Add the chopped onions and sauté until they soften and become translucent.
3. Stir in the sliced mushrooms and cook until they release their water and begin to brown.
4. In a small bowl, whisk the ragi flour with about ½ cup of water to create a smooth, lump-free slurry.
5. Pour the ragi slurry into the pan. Add the vegetable stock cube, thyme, oregano, salt, black pepper, and an additional 2.5 to 3.5 cups of water, depending on your preferred soup consistency.
6. Stir well to combine, bringing the soup to a gentle boil. Let it simmer for 5 minutes so the broth thickens and the raw flavor of the ragi cooks out.
7. Gently stir in the cubed tofu or low-fat paneer and let it simmer for another 1-2 minutes until heated through.

Ingredients
* 3-4 cups broccoli florets
* 6 soaked cashews
* 1 inch ginger
* 2 cloves garlic
* 1/2 cup paneer
* 1/2 cup curd
* 1/2 cup besan
* Chilli flakes (to taste)
* Black pepper (to taste)
* Salt (to taste)
* 1 tsp mustard oil
Instructions
* Blanch the broccoli florets.
* Blend the soaked cashews, ginger, garlic, paneer, and curd until smooth.
* Transfer the blended mixture to a bowl and add the besan, chilli flakes, black pepper, salt, and mustard oil.
* Coat the broccoli in the mixture and let it marinate for 5 -10 minutes.
* Air fry at 180°C for 10-12 minutes, or until crispy and golden.

Ingredients: Pumpkin Seeds (soaked for at least 4 hours or overnight), Fresh Water, 1 Date (pitted!), Vanilla Essence.
Method: Drain and discard the water from your soaked seeds. Toss the seeds into a high-speed blender with fresh water, your pitted date, and a splash of vanilla essence. Blend it on high, and then strain it thoroughly.
Pro Tip: Do not throw away that leftover pulp! Mix it straight into your cookie batter or flatbread dough. Zero waste, maximum fiber.

Crispy Zucchini Tikki
Looking for a quick, low calorie snack that’s crunchy outside and soft inside?
These Zucchini Tikkis are packed with veggies, super easy, and perfect for tea-time or meal prep!
✅ Ingredients
1 zucchini (grated)
¼ tsp salt
1 cup chopped spinach
1 small onion (finely chopped)
1 cup oats powder (ground oats)
¼ cup cheese (optional but yummy!)
Spices to taste:
Salt
Cumin powder
Black pepper
Garlic (minced or powder)
Chili flakes / cumin (optional)
👩🍳 Instructions
Grate the zucchini and add ¼ tsp salt.
Keep it aside for 5 minutes.
Squeeze out the excess water completely.
Add spinach, onion, oats powder, cheese, and spices.
Mix everything well and shape into small tikkis/patties.
Shallow fry on a pan until golden and crisp on both sides.
(You can also freeze them for later!)

1 Lauki (600-700g)
1 tsp oil or spray
1 tsp Cumin seeds
1 tsp Sesame seeds
1/2 cup Semolina
1/2 cup Rice
Spices - Red chilli powder, Turmeric, Coriander, Garam masala, Salt
Method:
1. Grate Lauki.
2. In a pan add oil, cumin & sesame seeds. Sauté for 30 seconds.
3. Add grated lauki & cook for a few minutes until its soft.
4. Add semolina & rice & spices.
5. Cook for another 10 mins, stirring frequently. It should be like a dough.
6. Shape the mixture into fries & airfry at 180°C for 12-15 mins.

Roasted Tomato Soup
Ingredients
* Tomatoes: 2, cut in halves
* Cherry tomatoes: 6 (or any tomatoes of choice)
* Red bell pepper: 1/2
* Garlic cloves: 6–7
* Laung (clove): 1
* Tej patta (bay leaf): 1
* Fresh basil leaves: 10–12
* Degi mirch: 1/2 teaspoon
* Black pepper: 1/2 teaspoon
* Rice flour slurry (1 teaspoon rice flour mixed with a little water)
* Salt to taste
* Oil spray
* Water as needed
* Fresh cream and basil leaves for garnish (optional)
Method
1. Heat a heavy-bottom pan or tawa.
2. Place the halved tomatoes, cherry tomatoes, red bell pepper, garlic cloves, laung, and tej patta on it.
3. Spray a little oil and sprinkle some salt.
4. Roast everything from both sides until lightly charred and softened.
5. Remove the tomato peel and discard the tej patta.
6. Transfer the remaining roasted ingredients to a blender, add fresh basil leaves, and grind into a smooth paste.
7. Sieve the mixture into a pot.
8. Add water to adjust consistency, then mix in degi mirch, black pepper, salt, and the rice-flour slurry.
9. Cook on medium heat for about five minutes, stirring occasionally.
10. Garnish with cream and basil leaves if desired, and serve warm.
Air fryer option
Roast all vegetables at 190°C for 10–12 minutes, shaking the basket halfway.
Makhana Chocolate Bites
Ingredients:
* 1 cup Makhana (Fox nuts)
* 1 tbsp H**p seeds
* 2 tbsp Pumpkin seeds
* 2 tbsp Sesame seeds
* 60g Sugar-free chocolate
* 1 tbsp Peanut butter
* 1 scoop Protein powder
* 1/4 cup Water (to mix protein layer)
Instructions:
1. Crunch Base: Dry roast 1 cup makhana for 5 minutes until crispy. Add h**p seeds, pumpkin seeds, and sesame seeds.
2. Chocolate Coating: Melt 60g sugar-free chocolate, pour it over the makhana-seed mix, and combine well. Transfer to a chocolate mould or a butter-paper-lined tray.
3. Protein Swirl: In a separate bowl, mix peanut butter, protein powder, and water until smooth. Spread evenly over the chocolate layer.
4. Set: Freeze for 20 minutes to set, then store in the fridge.

Method:
Spray veggies with oil, sprinkle salt, and bake until beautifully roasted.
Let them cool, squeeze out the roasted garlic, and blend everything with soaked cashews, water, and coconut milk until silky smooth.
Pour into a pan, simmer for 5 minutes.
Serve hot with a sprinkle of black pepper and chilli flakes!
