🥐 Homemade Croissants

• Mix all-purpose flour. Activate yeast with lukewarm water, a little sugar, and salt.
• Combine everything to make a smooth dough and knead well.
• Shape into a rectangle and refrigerate for 4 hours.
• Flatten cold butter into a rectangle, wrap it inside the dough, and fold. Chill for 4 hours.
• Roll, fold, and chill for 4 hours. Repeat this process 4 times.
• Roll out the dough, cut into triangles, and shape into croissants.
• Let them proof for 4–5 hours, until doubled in size.
• Brush with 1 egg yolk + a splash of milk.
• Bake in a preheated 180°C (356°F) oven for 15–20 minutes, until golden brown.
