This 2 ingredient gluten-free sweet potato wrap could not be easier to make! 🍠🔥 A traditional tortilla wrap has 34g of net carbs, this wrap has approximately 10g. Game changer for low-carb eating! Gluten-Free Sweet Potato Wrap (Makes 1 Wrap): 20 thin raw sweet potato slices (approximately ⅓ a medium-sized sweet potato) ⅓ cup shredded cheddar cheese High Protein Buffalo Chicken (Enough To Fill 4 Wraps): ¼ cup Buffalo sauce, I used Mike's Red Hot Buffalo Sauce ⅓ cup Greek yogurt ¼ cup sour cream ¼ cup ranch dressing 2 tbsp blue cheese 3 cups rotisserie chicken Additional Ingredients: 3 scallions sliced (optional) ¼ cup crispy onions (optional) Instructions: Preheat the oven to 400°F. Place the sweet potato slices onto a parchment lined baking sheet. Form a 4 by 5 rectangle overlapping the sweet potato slices as shown. Top with shredded cheddar cheese and bake on the top 3rd of the oven for 10 minutes or until the cheesy edges are a deep golden brown. Remove from oven and let cool to room temp. Add all the Buffalo Chicken ingredients except the chicken to a blender and blend well. Toss chicken in Buffalo sauce.
