With it doing nothing but snowing and snowing and now RAINING, we've moved into a "soup of the day" situation. I'm having fun getting creative, and there is always something hot on the stove for Eric when he comes in from outside. Today's offering is a variation on Instant Pot Lasagna Soup. I used up the last of several different kinds of pasta, tossed some baby Spinach and mild Italian sausage, and mixed in some cottage cheese at the end. Topped with mozzarella, it's pretty ridiculous for a thrown together meal.

I love snow days. I can't go anywhere, it's beautiful out, and I can just do home things. Today was a pot of chili (mild, no beans lol), a meatloaf packed full of veggies for dinner tonight, bread, and blueberry pie. Now, a nap.
