RECIPE FOR CRISPY MERINGUES
Step by step, they always turn out well.
Ingredients:
4 egg whites, at room temperature
1 cup (200 g) of white sugar
1 pinch of salt
1/2 teaspoon of lemon juice or white vinegar
1/2 teaspoon of vanilla extract, optional
Pink food coloring, in gel or liquid, to taste
Preparation:
1. Prepare the whites
Make sure the whites have no yolk residue. The bowl and whisk must be completely clean, dry, and free of fat for the meringue to set properly.
2. Start whipping
Place the whites in the bowl with the pinch of salt. Whip with an electric mixer at medium speed until they start to become frothy.
3. Add the sugar
Without stopping whipping, gradually add the sugar, one tablespoon at a time. Continue whipping until you get a white, bright, firm meringue with hard peaks. When you rub a little between your fingers, the sugar granules should no longer be noticeable.
4. Add flavor and color
Add the lemon juice or vinegar and, if desired, the vanilla extract. Add a few drops of pink food coloring and mix gently until you get a uniform color, avoiding reducing the volume of the meringue.
5. Form the meringues
Place the meringues in a piping bag with a narrow nozzle. Cover a baking sheet with parchment paper and form small cups, leaving a little space between them.
6. Preheat the oven
Preheat the oven to 90β100 Β°C. The temperature should be low so that the meringues dry slowly and retain their beautiful color without browning.
7. Bake
Bake for 1 hour 30 minutes to 2 hours, depending on the size. They will be ready when they feel dry, firm, and easily detach from the paper.
8. Cool slowly
Turn off the oven and leave the meringues inside with the door slightly open until they cool completely. This helps them dry out and become crispier.
Tip
For beautiful and defined meringues, it is better to use pink food coloring in gel, as it adds color without adding too much liquid to the mixture.

Rose Puff Pastry with Cream Cheese π©·πΉ

Ingredients:
500 g corn dough
200 g butter or vegetable shortening, at room temperature
1 cup sugar
1 teaspoon baking powder
3/4 to 1 cup milk, approximately
1 teaspoon vanilla extract
Pink or red food coloring, to taste
250 g cream cheese
1/2 cup raisins, optional
20 to 24 corn husks
Enough water to moisten the husks and steam the pastry
Preparation:
1. Soften the husks
Place the corn husks in a large container, cover with hot water, and let them soak for 25 to 30 minutes until soft and flexible. Drain well.
2. Beat the butter
Place the butter or vegetable shortening in a large bowl and beat for 4 to 5 minutes until creamy and light. This helps make the pastry softer.
3. Add the dough
Add the corn dough, sugar, and baking powder little by little. Continue beating until you get a smooth mixture.
4. Add the cream cheese
Add the milk little by little while continuing to mix. The dough should be soft, moist, airy, and easy to spread, but not liquid. You may not need all the milk.
5. Prepare the pastries
Place a husk with the wide end facing up and spread about 2 tablespoons of pink dough in the center, leaving the edges free.
6. Fold
Fold both sides of the husk toward the center to enclose the dough, then fold the bottom up.
7. Place in the steamer
Place the pastries vertically, with the opening facing up. They should stay together to hold them, but not be too tightly packed.
8. Steam
Cover the steamer and steam for about 60 to 75 minutes over medium heat. Check during cooking to make sure there is still enough water in the bottom of the steamer, and make sure the water never touches the pastries directly.
9. Check for doneness
Remove one pastry and let it rest for a few minutes. It is ready when the wrapper comes off easily and the filling is cooked, soft, and fluffy.
10. Let them rest
Turn off the heat and let the pastries rest for about 10 minutes before serving.
When you open them, the inside should look moist and fluffy, with the cream cheese soft and creamy in the center.
Serve hot with coffee, champurrado, atole, or hot chocolate.
This recipe makes about 20 to 24 pastries, depending on size.

Cheese and Ham Stuffed Pumpkins π

Ingredients:
3 large pumpkins
200 g ham, chopped into strips or cubes
250 g Oaxaca cheese, Manchego cheese, or grated mozzarella
2 eggs
1/2 cup flour
1 cup breadcrumbs
Salt, to taste
Pepper, to taste
Enough oil for frying
Preparation:
1. Cook the pumpkins
Wash the pumpkins well and place them whole in a pot with enough water and a little salt. Cook for about 20 to 25 minutes, depending on their size. The inside should be soft and moist, with the ham visible and the cheese completely melted and stretchy.
2. Serve

Homemade Sausage Rolls
Makes: 20β24 rolls
Ingredients:
For the Dough
All-purpose flour β 3 cups (360 g)
Lukewarm milk β ΒΎ cup (180 ml)
Sugar β 1 tbsp
Instant yeast β 2ΒΌ tsp (7 g)
Salt β Β½ tsp
Egg β 1
Unsalted butter, softened β 3 tbsp (45 g)
For Filling & Topping:
Small sausages / hot dogs β 20β24
Egg β 1, beaten (for egg wash)
Sesame seeds β 1 tbsp, optional
Method:
1.Make the dough:
Mix flour, milk, sugar, yeast, salt, egg and butter. Knead for 8β10 minutes until soft and smooth.
2.Cover and let rise for 1β1Β½ hours, or until doubled in size.
3.Roll the dough into a large rectangle and cut into long strips about 1β1.5 cm wide.
4.Wrap one dough strip around each sausage, slightly overlapping as you go.
5.Place on a parchment-lined baking tray. Cover and rest for another 15β20 minutes.
6.Brush the tops with beaten egg and sprinkle with sesame seeds if desired.
7.Bake in a preheated oven at 180Β°C (350Β°F) for 18β22 minutes, until golden brown.
8.Let cool slightly and serve warm with ketchup, mustard or your favourite dipping sauce. ππ

For the Chicken:
β’ Boneless skinless chicken breasts β 2 large (about 1Β½ lb/680g)
β’ Dill pickle juice β ΒΎ cup (180ml)
β’ Whole milk β ΒΌ cup (60ml)
β’ Large egg β 1
For the Coating
β’ All-purpose flour β 1 cup (125g)
β’ Powdered sugar β 1 tbsp (8g)
β’ Paprika β 1 tsp
β’ Garlic powder β 1 tsp
β’ Onion powder β Β½ tsp
β’ Salt β 1 tsp
β’ Black pepper β Β½ tsp
For Serving
β’ Soft hamburger buns β 4
β’ Dill pickle slices β 12β16

1. Slice each chicken breast horizontally to make 4 thin cutlets. Pound thicker areas gently so each piece cooks evenly.
2. Combine pickle juice and milk. Add chicken, cover and refrigerate for 30β60 minutes.
3. Whisk the egg into the marinade.
4. In another bowl, combine flour, powdered sugar, paprika, garlic powder, onion powder, salt and pepper.
5. Lift one piece of chicken from the marinade, let excess drip off, then press firmly into the flour mixture. Coat both sides thoroughly.
6. Heat about 1 inch of oil to 350Β°F (175Β°C).
7. Fry chicken for about 3β4 minutes per side until deep golden and the center reaches 165Β°F (74Β°C).
8. Drain briefly on a wire rack.
9. Lightly butter and toast the buns. Add pickles and crispy chicken and serve immediately.

For the Coating
β’ All-purpose flour β 1Β½ cups (190g)
β’ Cornstarch β Β½ cup (65g)
β’ Paprika β 2 tsp
β’ Cayenne pepper β Β½β1 tsp
β’ Garlic powder β 1 tsp

WINGSTOP-INSPIRED GARLIC PARMESAN WINGS
π Ingredients β Serves 4
β’ Chicken wings β 2 lb (900g), split into flats and drumettes
β’ Baking powder β 1 tbsp (12g)
β’ Salt β 1 tsp
β’ Garlic powder β Β½ tsp
β’ Black pepper β Β½ tsp
For the Garlic Parmesan Sauce
β’ Unsalted butter β 4 tbsp (57g), melted
β’ Garlic β 3 cloves, finely minced
β’ Finely grated Parmesan β Β½ cup (50g)
β’ Dried parsley β 1 tsp
β’ Black pepper β ΒΌ tsp
π©βπ³ Method:
1. Preheat oven to 425Β°F (220Β°C). Line a sheet pan with foil and place a wire rack on top.
2. Pat the wings very dry with paper towels. This is important for crisp skin.
3. Toss with baking powder, salt, garlic powder and pepper until lightly coated.
4. Arrange wings in a single layer with space between them.
5. Bake for 20 minutes, flip, then bake another 20β25 minutes until browned, crisp and at least 165Β°F (74Β°C) internally.
6. Meanwhile, gently cook minced garlic in melted butter for about 30 seconds. Don't let it brown.
7. Place hot wings in a large bowl and toss immediately with garlic butter.
8. Add Parmesan, parsley and pepper and toss again until every wing is coated.
