GINGER & SOY SLOW-COOKED BEEF 🍲✨
A little “what’s in the fridge?” dinner that turned out soooo delicious! Tender beef, plenty of veggies and a rich ginger and soy broth, spooned over rice. Definitely making this one again 🤍
Save this for an easy, cosy dinner!
INGREDIENTS • 500–750 g diced beef • 1 brown onion, sliced • 2 carrots, chopped • 200–300 g mushrooms, halved • 300 g pumpkin, cut into chunky pieces • A few handfuls of broccoli and cauliflower florets • 3 garlic cloves, crushed • 1 tbsp grated ginger • 2 cups beef bone broth • 3 tbsp soy sauce • 1 tbsp oyster sauce, optional • 1 tbsp honey or brown sugar •1 star anise • Rice, to serve
METHOD
Brown the beef in a little oil and transfer to your slow cooker.
Soften the onion in the same pan. Add garlic and ginger, then a splash of broth to lift all those lovely browned bits. Tip into the slow cooker.
Add carrots, mushrooms, remaining broth, soy sauce, oyster sauce, star anise and honey.
Cook on HIGH for around 4 hours, or until the beef is tender. Some cuts will need longer.
Add pumpkin for the final 1–1½ hours, cauliflower for the last 45–60 minutes and broccoli for the last 20–30 minutes, checking they’re tender before serving.
Spoon over rice with plenty of that delicious broth!
The pumpkin softens into the sauce and gives it the loveliest little sweetness 🧡

One of my favourite parts of BLOOM 🌿
During the acupuncture + sound healing portion of the day, your treatment isn’t a one-size-fits-all protocol.
I’ll take a moment to check in with your body, using gentle palpation to help guide where your acupuncture treatment is needed that day.
Your treatment may only involve a few carefully selected needles — sometimes less really is more ✨
Then all that’s left for you to do is settle in, listen to the sound healing and allow yourself to completely switch off.

Last night I was feeling a little puffy, bloated and heavy, so I made myself a warm corn silk and goji berry tea 🌽
Corn silk—called Yu Mi Xu in Chinese medicine—is traditionally used to encourage urination and help the body clear accumulated dampness and fluid. I added a few goji berries for a slightly sweeter, more nourishing brew.
It’s light, surprisingly pleasant and one of those simple herbal teas I like having available when I feel a little sluggish and waterlogged.
A little caution: corn silk may have a diuretic effect, so check with your doctor or qualified practitioner before using it if you take diuretics, blood-pressure or diabetes medication, have kidney problems, are pregnant, or need to monitor your fluid or potassium levels.
This is general information and traditional-use education—not individual medical advice.
A little facial acupuncture for those “Are you actually serious right now?” lines 😂
Facial acupuncture involves placing fine needles in targeted areas of the face and may help relieve facial muscle and promote local circulation.
Because apparently simply asking the kids to make sensible choices isn’t an option 🙃
Individual responses to treatment vary.
Results may also vary depending on what the kids do next 😂
Maybe you don’t need to push through it…
Maybe you need this.
