Two kinds of vinegar in the marinade, that's what gives this a sharper tang than the usual one-vinegar version.

MARINATED CUCUMBER / TOMATO SALAD

- 3 cucumbers, sliced
- 3 tomatoes, chopped
- 1/2 medium onion, thinly sliced
- 1/4 cup olive oil
- 3 tbsp white vinegar
- 1 tbsp red wine vinegar
- 2 tsp sugar
- 1 tsp salt
- 1/2 tsp black pepper

METHOD
1. Combine the sliced cucumbers, chopped tomatoes and sliced onion in a large bowl.
2. Whisk the olive oil, white vinegar, red wine vinegar, sugar, salt and pepper together.
3. Pour the dressing over the vegetables, toss to coat.
4. Cover and refrigerate at least 1 hour before serving, longer if you can.

That marinating time is what actually turns crisp vegetables into a marinated salad.
