BAD FOOD

That’s the one thing I’ll never eat!

No matter how hungry I am, I won’t force myself to eat something that doesn’t taste good. I don’t care how high-quality the ingredients are, how famous the chef is, or how many Michelin stars the restaurant has. If a steak, for example, doesn’t taste good, I won’t eat it — even if it’s covered in gold 😁

That’s how I train my palate and my sensitivity to different flavors. My receptors and sense of smell are already quite well developed thanks to my profession as a perfumer. And I do the same thing with food.

I always try local food when I travel, and I make a point of visiting local cafés, fancy restaurants, and street food spots. At the end of the day, it’s all about the taste 🤌🏻

So when you see me rolling my eyes in my videos, trust me - it really is that delicious 😂

SOMETIMES THE BEST SAUCE IS TIME

I made that classic homemade pasta inside a 43-kilogram wheel of Parmesan. By the way, this is actually how Italians often enjoy it 🤓

Authentic Parmigiano Reggiano is aged for at least 12 months, but more often 24–36 months (and it develops even more depth with longer aging). Mine was aged for 36 months.

During that time, the cheese changes from the inside out: proteins gradually break down into amino acids, creating that deep, intensely savory umami flavor, almost like a really good broth.

And then there are those little crunchy bits.

And no, they’re not salt 🙂 They’re tiny crystals that form as the cheese ages. They add a pleasant crunch and that luxurious texture you get from a beautifully aged cheese.

This kind of Parmesan is my favorite - rich, deep, and slightly sharp in flavor 🤤

And this recipe is so easy to recreate at home - just pasta and cheese, nothing else, and absolutely delicious 😌

AUTUMN IS THE SEASON FOR WARM, FRESHLY BAKED BUNS 🍂

It feels like autumn is when we start appreciating the simple moments even more: slow evenings at home, a cup of hot tea, and the smell of freshly baked goods coming from the oven.

Crispy filo pastry buns filled with creamy cheese and spinach - the perfect excuse to slow down for a little while and treat yourself to a cozy evening 🤎

Maybe that’s exactly what autumn is for: finding little moments of warmth and comfort that we can create for ourselves, even in the middle of our everyday hustle.

YOU HAVE TO KNOW HOW TO DREAM

I want to share something I’ve realized recently, along with a little piece of advice. I’m sure you’ll love this thought as much as I do 😌

How many of you set goals for yourselves and reflect on them at the end of the month or year? I’m sure many of you do. And how many get disappointed when you don’t achieve what you planned within the deadline? Of course!

But that doesn’t mean your dream won’t come true. Maybe you simply gave it too strict a deadline. And dreams don’t work that way ✨

When we limit ourselves to a month or a year, we stop allowing ourselves to dream on a truly grand scale. We start thinking only about what’s realistic to achieve within a certain period of time.

Think back to how we dreamed as children: “I want to become an astronaut,” “I want to see the North Pole,” “I want to travel around the world.” We never planned to make it happen within a week, a month, or a year. Our dreams were limited only by our imagination 💫

As adults, we try to rationalize everything and turn every dream into a goal that needs a checkmark next to it ✅

Please don’t put deadlines on your deepest desires. Allow yourself to see the world more broadly and dream without limits - because most of the time, those limits exist only in our heads.

Tell me what you want more than anything in the world. I truly believe that one day, it can become your reality 🤍
