Serve up some strawberries 🍓 Talking Tables and Victoria Gray recently teamed up to create this dreamy strawberry themed garden set up to celebrate Wimbledon, British strawberry season and being outdoors together in the glorious sunshine with some delicious sweet treats. Get set for strawberry themed soirees and fruity picnics with Victoria’s recipe for Strawberry and Champagne cheesecakes:
Makes 4
Ingredients
8 shortbread finger biscuits, crushed
20g unsalted butter, melted
300g full fat soft cheese
2 tsp caster sugar
juice and zest of ½ a lime
100ml double cream, whipped
300g strawberries hulled and quartered
2 tsp strawberry jam, sieved
4 tbsp Champagne
Method
Mix together the strawberries, champagne and sieved jam, chill in the fridge while preparing the filling.
Mix the crushed biscuits and butter together in a bowl, then divide evenly between 4 glasses. Chill in the fridge.
Add the soft cheese to a bowl and beat in the sugar, lime juice and zest until smooth. Gently fold in the whipped cream. Carefully spoon the filling over the biscuit bases, return to the fridge to chill.
When ready to serve, spoon the berries on top of the cheesecakes.
