Mutton 500gms (Bone-in Shoulder cuts best )
125 gms | 1/2 Cup Plain Yogurt/Curd
2 Teaspoon Ginger Garlic paste
1 Teaspoon Salt
1 Tablespoon Coriander powder
1 Teaspoon Cumin powder
1 Teaspoon Turmeric powder
2 Teaspoon Kashmiri Chilli powder
1 Teaspoon Red Chilli powder
For Fried Onions
2 Small 1-2 inch diameter Onions ( around 150gms total)
Vegetable Oil to Fry
For Gravy
2 Tablespoon Ghee
Bay Leaf 1, 4 Cloves, 4 Green Cardamom, 10 Peppercorns, 1 Cinnamon stick, 1 Black Cardamom
Marinated Mutton
1 1/2 Cups Hot Water
Salt to taste
1 Teaspoon Sugar, optional
Fried Onions Paste
Cashew Paste
1/4 Teaspoon Crushed Javitri/Mace
1/4 Teaspoon Jayphal/Nutmeg powder
1/2 Teaspoon Garam masala

Perfect Mutton Curry Recipe without cooker
Matan: 1 kg (dhula hua)
Pyaaj: 5-6 pieces (finely chopped)
tel: 1/3 cup (sarason's tel is better as base)
adarak-lahasun - haree chilli pest:
Adarak: 2 inch piece
garlic: 15-20 kilos
green chilli 8-10
Khade masala (saabut): 1 leaf black pepper 15-20 jars 1 1/2 teaspoon paste
ground spices (powder):
Haldee: 1/2 teaspoon
1 teaspoon kashmeeree chilli powder
taste according to name
Meet Masala: 1 big spoon (of any beef brand)
Mutton: 1 kg (Washed)
Onions: 5-6 large (finely chopped)
Oil: 1/3 cup (mustard oil is best)
Ginger-Garlic-Green Chili Paste:
Ginger: 2-inch piece
Garlic: 15-20 cloves
Green Chilies: 8-10
Whole Spices (Whole): 15-20 bay leaves, 1 1/2 teaspoons of black pepper paste
Ground Spices (Powder):
Turmeric: 1/2 teaspoon
1 teaspoon Kashmiri chili powder
Salt to taste
Meat Masala: 1 tablespoon (any brand)

Ingredients:
2 cups fresh coriander (dhaniya)
1 cup fresh mint leaves (pudina)
10 to 12 green chillies
1/2 inch ginger (adrak)
1 tsp salt
1 tbsp roasted cumin powder (jeera powder)
1/2 tsp black salt (rock salt)
1 tbsp Pani Puri masala
3 glasses of water
Puri shells
Boiled and mashed potatoes (optional)
Tamarind chutney (optional)
Sweet chutney (optional)
Sev (optional)
Boondi (optional)
Chopped onions (optional)
Instructions:
Instructions:
Wash the coriander and mint leaves thoroughly.
Peel and chop the ginger into small pieces.
In a blender, add coriander, mint leaves, green chillies, and ginger. Blend them into a smooth paste. You may need to add a little water to facilitate blending.
Once blended, strain the paste through a fine sieve to get a smooth liquid. Discard any solids left behind.
Transfer the strained liquid into a bowl.
Add roasted cumin powder, black salt, and Pani Puri masala to the liquid. Mix well.
Add 3 glasses of water to the mixture and stir until everything is well combined. Adjust the seasoning according to your taste.
Chill the prepared Pani (spicy water) in the refrigerator for at least 30 minutes before serving.
Assemble the Pani Puri by making a small hole in the center of each Puri shell.
Optionally, stuff the puris with mashed potatoes, and add tamarind chutney, sweet chutney, chopped onions, sev, and boondi.
Just before serving, fill each Puri with the prepared spicy water (Pani) and serve immediately.

Ingredients:
• 1 cup yellow moong dal (split and husked)
• ¾ to 1 cup ghee
• 1 cup sugar (adjust to taste)
• 1 cup full-fat milk (or mix of milk and water)
• ½ tsp cardamom powder
• A pinch of saffron (optional)
• 2-3 tbsp chopped nuts (almonds, cashews, pistachios)
• Optional: 2-3 tbsp khoya/mawa for extra richness
Tips for Success:
• Soak moong dal for 2-4 hours for easier grinding and better texture.
