Here is an easy recipe for you to try

Chickpea Broccoli and Bacon Salad

Serves 4

-60g lean bacon rashers 🥓
-250g fresh broccoli 🥦
-3tbsp olive oil 🫒
-2tbsp sherry vinegar or apple cider vinegar
- 400g can chickpeas, drained
-4 red peppers roasted and peeled
-Handful of rocket leaves
Grill the bacon for a few mins,turning occasionally until crispy, best cooked in an air frier

2. Cook the 🥦 broccoli in a pan ofboing water for 3 minutes until just tender.. Drain, cool in cold water and drain again.

3. Using a large bowl, whisk together the oil and sherry vinegar or apple cider vinegar and season with salt and pepper.

Add the broccoli, chickpeas, peppers and rocket then toss together to mix well

Roughly chop the bacon over the top and serve
