Badri cow is an indigenous variety found in the hilly areas of Uttarakhand. To bring to you the good of Badri cow’s ghee, the cow's milk is first heated with hump in a pottery vessel above cow-dung fire at low flame. Thereafter, yoghurt is prepared from warm milk. This yoghurt is then hand churned using the "traditional manthan (bilona) method".
This way, we get butter milk and makhan. According to the traditional Vedic bilona hand-churned method, makhan obtained is put in a pottery vessel above the chula of cow-dung fire at low flame. this way, we obtain ghee. ghee quality, color, and flavor are based on cow's milk, warming period, and makhan quality. In this process about 30 to 35 kg of yoghurt is consumed to make only 1 kg of ghee.

Chait maas have a big significance in hindu mythology. This month marks start of Hindu Calendar year followed by chaitra navaratra and Ram Navmi. Another famous festival this month is सतुआनी
Between the Chait and the Baisakh (about the 15th of April) when the Sun enters the sign of the Ram, in Bihar and majorly in Purvanchal the beginning of Summer season is celebrated with sattuani. Like most of Hindu festivals, sattuani is about worshipping Mother Nature. It was customary to feed Brahmans with sattu (ground parched bengal grams), tikola (immature mangoes), water, and to give alms in yesteryears.
If interrogated mostly the Hindu festivals or even Hindu mythology have immense significance related to eating habits, lifestyle and survival practices. Sattu for instance reduces bloating, increases metabolism, when consumed empty stomach it stimulates the growth of the red blood cells in the body and helps our body burn calories effectively.
Hence, we started our day with drinking Sattu ghol or sattu soup made of sattu powder, jeera powder, salt, lemon juice and chopped parsley leaf and green chilli.
