Vegan Pho recipe for the fall szn🍜🍲🥢✨🧚🏾💖
(P.S no measurements bc I wasn’t sure how this was going to turn out 😅)

What you need:
Oyster mushroom
Lions Mane (🧠)
Lions Mane supplement (WF)
Bella mushroom
2-3 sheets of Nori—
Thin rice noodles
Zucchini n veggie peeler
Veggie stock
Watercress
Cilantro
Broccoli (lol I kno)
Liquid aminos
Garlic (again I kno leave me alone)
Fresh Basil
Green onion
Bean sprouts
Yellow bird date Sriracha (WF)
Mama O’s Spicy Vegan Kimichi (WF)
Agave
Thai chili peppers
Habanero peppers
Spices:
Vegan chickenless( Trader Joe’s )
Hot pepper (Go to African market)
Chimichurri
Cayenne
Jamaican Curry Powder
Garlic powder
Black pepper
Onion
Red curry (I use alkaline one from Staay Happy)
Basil flakes
1.Sauté mushroom garlic bean sprouts and onion in some grape seed oil and half your seasoning. Adding in kimchi agave sriracha n liquid aminos
2.While sauté,boil veggie broth with spoon of lions mane powder and broccoli. (As you are adding seasoning to your pan you are sautéing on you will add same seasoning to pot for the soup. (adding cress and cilantro basil last)
3.Get back to sauté pan and add in hot peppers and the rest of your seasoning go taste
4.Cook rice noodles in fresh pot of boiling water for 4 min, rinse with cool water to stop cooking and set aside.
5.Turn off heat on sauté pan and set aside.
Using veggie peeler cut zucchini into flat like noodles then sauté in grape seed oil garlic onion powder and black pepper for two min. Set aside.
6.Add majority of sautéed mushroom, rice noodles and zucchini to broth. Let it cook a couple min before turning off heat and adding in watercress cilantro and fresh basil.
7.Heat one sheet nori over open flame and crinkle into soup, saving one sheet to be filled with mushroom to enjoy .

Smoked bacon walnut basil salsa avocado toast from on my little adventure this weekend soooo yummy. Most of the plant based restaurants in LA are overpriced and underwhelming in terms of flavor but this is one of the VERY few that is not ☺️🥰✨

Aka “tacos” ...the right way lol 💅🏾✨ so fun lol
