Gyro meat that's made without a spit? It can be done! Recipe inspired by @mezemike 

This viral method uses parchment paper to flatten seasoned ground beef that's baked and broiled to look just like the real thing. Recipe below:

Ingredients:
1 medium onion, quartered
1 pound ground beef
1 pound ground lamb
3 garlic cloves
2 teaspoons kosher salt
1 teaspoon each dried oregano, dried thyme and dried rosemary, crushed
3/4 teaspoon ground cumin
1/2 teaspoon pepper
1 to 3 tablespoons olive oil
8 whole pita breads
Optional toppings: Chopped tomatoes, sliced red onion, shredded lettuce and tzatziki sauce

Directions:
Preheat the oven to 400°.
In a large bowl, mix together ground beef, onion, yogurt, olive oil, oregano, garlic, salt, cumin, coriander, pepper, paprika and parsley.
Divide mixture into two equal-sized portions. Place one portion in the center of a 16x12-in. piece of parchment paper. Place another equal-sized piece of parchment paper on top; using your hands or a rolling pin, flatten into a thin rectangle, the same size as the parchment paper. Starting from the short end, fold the parchment over the meat, rolling it tightly into a 1-1/2-in. log. Repeat with the remaining portion.
Place beef logs on a rimmed 15x10x1-in. baking sheet. Bake 15 minutes. Drain off excess grease. Unroll the meat; break into smaller pieces. Return to the baking sheet. Broil 2-3 minutes or until the edges are crispy.
Serve gyro meat in flatbreads or pitas with shredded lettuce, tomato, onion and tzatziki sauce.

I used this method last night for dinner and it was phenomenal!

I used 50/50 (organic grass fed and finished) lamb with 85/15 ground beef. 2 pounds total
Add 1/2 cup Za’atar
1 1/2 tsp salt
1 1/2 tsp garlic powder
1 tsp ground pepper
1/4-1/2 tsp cayenne pepper

I caramelized 1 &1/2 lg onions sliced and 4 garlic cloves chopped (let them cool before adding to ground meat.

1 cup of panko adding enough buttermilk to make breadcrumbs tacky. Allow buttermilk to absorb while onions cool.

Once the onions, garlic, and breadcrumbs are ready add to the meat and mix like you would a meatloaf. Watch the video it shows you how to roll out in parchment paper and bake in oven!

Summer tomatoes mean one thing around our house—Tomato Pie season! Before heading out for a little getaway, I stopped by the farm stand and picked up 7 beautiful tomatoes. Last night, Jeff and I enjoyed some Southern fried chicken and a slice of homemade tomato pie.

That first bite? Pure summer heaven. There’s just something special about farm-fresh tomatoes that makes every recipe shine. Thank you for providing such incredible local produce! 🌞🍅

The Month of May in Cake… 🍰

May was stacked high with layers, buttercream, sprinkles, celebrations, and a whole lot of cake!
