Your grandparents didn't fight dandelions. They ate them, and here's how to do it right. πΏ
The greens: pick young, early spring before the plant flowers, that's when they're tender and least bitter. Raw in salads like arugula, or wilted in bacon fat the old farmhouse way. After blooming they turn bitter, better cooked. πΌ
The flowers: pull the yellow petals off the green base (the base is what's bitter) for jelly, fritters, or old-time dandelion w**e.
The root coffee, full method, the way the Depression generation did it:
* Dig in fall, after a frost or two, that's when the taproot is fattest and sweetest. Loosen with a fork and pull slow, the root runs deep.
* Scrub hard under running water, no need to peel.
* Chop into pea-sized pieces, roughly even so they roast even.
* Spread on a baking sheet and roast at 350Β°F for 30 to 40 minutes, stirring once or twice. You're waiting for deep coffee-brown all the way through, and the smell tells you, your kitchen turns roasty and sweet. Underdone tastes woody, so trust the color.
* Cool completely, then grind like coffee beans.
* Brew 1 to 2 teaspoons per cup, in a french press, a percolator, or just simmered in a pan for 10 minutes and strained, cowboy style.
* Store the roasted grounds in a sealed jar, they keep for months. Tastes dark, roasty, a little like chicory blends from down south. No caffeine, which is exactly why old-timers drank it after supper too.
Honest rules: harvest only from unsprayed ground, never roadsides. Real dandelion has one bloom per hollow stem that leaks white sap. Ragweed-allergic folks, go easy the first time.
