Boil the water, add the chickpeas, and blend until completely smooth.
Lower the heat, then add the butter and almond flour. Stir until a smooth dough forms and pulls away from the pan.
Transfer to a bowl and let cool slightly. Mix in the egg and sweetener until fully incorporated.
Transfer the dough to a piping bag fitted with a star nozzle. Pipe into hot oil, snip into finger-sized churros, and fry until golden and crispy.
Drain, then coat generously with cinnamon and sweetener. 🤤

HOW TO MAKE IT:
Soak 1 cup raw almonds in water for 30 minutes, then drain and discard the soaking water.
Blend the soaked almonds with 1/2 liter fresh water until completely milky and smooth.
Strain through a fine-mesh strainer or cheesecloth. Save the leftover almond pulp!
Mix the almond pulp with the egg, vanilla, and sugar-free sweetener. Add a little melted butter if needed to help it hold together.
Shape into 6 small biscuits and place on a parchment-lined baking sheet.
Bake at 350°F (175°C) for about 20 minutes, until golden brown.
