Ravenna Mini Pizzas
Ingredients:
2 LARGE EGGPLANTS
1 CUP (TEA) OF CHERRY TOMATOES
1 CUP (TEA) OF GRATED RICOTTA
1 CUP (TEA) OF TOMATO SAUCE
1 SPOON (SOUP) OF OLIVE OIL
1 SPOON (TEA) OF MARGARINE
OREGANO TO TASTE
SALT AND BLACK PEPPER TO TASTE
Method of preparation:
SLICE THE eggplants (NO NEED TO PEEL ITI WITH ABOUT 1.5CM WIDTH. PLACE THE EGGPLANT SLICES ON A BAKER LIGHTLY GREASED WITH MARGARINE AND SPRINKLE A LITTLE SALT ON THE TOP. PUT ONE SPOON AND A HALF OF TOMATO SAUCE ON TOP OF EACH SLICE AND ADD THE CHERRY TOMATO AND GRATED WHITE CHEESE. SPRAY WITH OREGANO AND TAKE IT INTO THE PRE-HEATED OVEN AT 350ºF FOR ABOUT 30 MINUTES. REMOVE FROM THE OVEN AND SERVE IMMEDIATELY
