There’s a Chinese saying “一年茶，三年药，七年宝” (yī nián chá, sān nián yào, qī nián bǎo) which translates to “one year tea, three years medicine, seven years treasure.”
White Peony (白牡丹) is one of the least-processed teas in the world. What makes it special is its ability to age: the flavor softens and deepens, the astringency fades, and it becomes increasingly gentle on the body.
Our current batch is three years aged, right at that medicine stage. Its characters have trasnformed to mellow, warm, easy on digestion.
We’re nearly sold out of this vintage, and once it’s gone, the next harvest will need another three years to reach this same depth. If you’ve been on the fence, this is your chance.
