Ingredients
1 lb (450 g) beef tenderloin, very fresh, finely hand-chopped
2 shallots, finely minced
2 tbsp capers, chopped
4 cornichons, finely chopped
2 tsp Dijon mustard
2 tsp Worcestershire sauce
1 tsp hot sauce (optional)
2 tbsp extra virgin olive oil
1 egg yolk (for serving)
2 tbsp fresh parsley, finely chopped
Salt and freshly ground black pepper, to taste
Toasted baguette slices, for serving
Method
Finely chop the chilled beef with a sharp knife.
Mix the shallots, capers, cornichons, Dijon mustard, Worcestershire sauce, hot sauce, and olive oil.
Fold the dressing gently into the beef.
Season with salt, pepper, and parsley.
Shape into a neat round using a ring mold.
Top with the egg yolk.
Serve immediately with toasted baguette.
Steak Tartare with Truffle Oil
Ingredients

Ingredients
2 tbsp vegetable oil
1 large onion, sliced
2 cloves garlic, minced
1 tbsp grated ginger
2 medium potatoes, peeled and cubed
2 large carrots, cut into chunks
1 cup broccoli florets
1 red bell pepper, chopped (optional)
1 zucchini, chopped (optional)
4 cups (950 ml) vegetable stock or water
1 package (3.5 oz / 100 g) Japanese curry roux cubes
1 tbsp soy sauce
1 tsp honey or sugar (optional)
Salt and black pepper, to taste
Method
Heat the oil in a large pot and sauté the onion until soft and lightly caramelized.
Add the garlic and ginger, cooking for about 1 minute until fragrant.
Stir in the potatoes and carrots, cooking for 2–3 minutes.
Pour in the vegetable stock, bring to a boil, then reduce to a simmer for 15 minutes.
Add the broccoli, bell pepper, and zucchini. Cook for another 8–10 minutes until tender.
Turn off the heat and stir in the Japanese curry roux until completely dissolved.
Return to low heat and simmer for 5 minutes until the curry thickens.

Ingredients
4 boneless, skinless chicken breasts

½ cup (65 g) all-purpose flour
2 tbsp olive oil
2 tbsp butter
16 oz (450 g) cremini mushrooms, sliced
4 cloves garlic, minced
½ cup (120 ml) Marsala w**e
1 cup (240 ml) chicken broth
1 tsp fresh thyme
2 tbsp chopped parsley
Method
Season and lightly dredge the chicken with flour.
Sear until golden on both sides and set aside.
Cook the extra mushrooms until deeply browned.
Add the garlic and thyme.
Pour in the Marsala w**e and reduce slightly.
Add the chicken broth and return the chicken to the skillet.
Simmer until the chicken is cooked through and garnish with parsley.
Creamy Chicken Marsala
Ingredients
4 boneless, skinless chicken breasts
Salt and pepper
½ cup (65 g) flour
2 tbsp olive oil
2 tbsp butter
12 oz (340 g) mushrooms, sliced

Method

Ingredients
8 chicken thighs and/or drumsticks
Salt and black pepper, to taste
2 tbsp olive oil
6 slices bacon, chopped
1 large onion, diced
2 carrots, sliced
4 cloves garlic, minced
8 oz (225 g) mushrooms, halved
2 tbsp tomato paste
2 tbsp all-purpose flour
2½ cups (600 ml) Burgundy red w**e (or Pinot Noir)
1 cup (240 ml) chicken stock
2 bay leaves
4–5 sprigs fresh thyme
12 pearl onions, peeled
2 tbsp butter
Fresh parsley, chopped (for garnish)
Method
Season the chicken with salt and pepper.
Cook the bacon until crisp. Remove and set aside, leaving the fat in the pot.
Brown the chicken on all sides in the bacon fat and olive oil. Remove.
Sauté the onion, carrots, garlic, and mushrooms until lightly browned.
Stir in the tomato paste and flour. Cook for 1 minute.
Pour in the red w**e and scrape up any browned bits from the bottom of the pot.
Add the chicken stock, thyme, bay leaves, bacon, pearl onions, and browned chicken.

For the Gremolata (Optional)

Method
