🍓🍰 Homemade Red Velvet Strawberry Cheesecake

Ingredients:
For the Graham Cracker Crust:
1½ cups graham cracker crumbs
6 tbsp unsalted butter, melted
3 tbsp brown sugar, packed
For the Red Velvet Layer:
1¼ cups all-purpose flour
¼ cup unsweetened cocoa powder
1 cup granulated sugar
½ cup vegetable oil
2 large eggs, room temperature
¾ cup buttermilk, room temperature
1 tbsp liquid red food coloring
1 tsp vanilla extract
½ tsp baking soda
1 tsp white vinegar
½ tsp salt
For the Cheesecake Layer:
24 oz cream cheese (3 blocks), softened
¾ cup granulated sugar
3 large eggs, room temperature
½ cup sour cream, room temperature
1 tsp vanilla extract
¼ cup heavy cream
For the Strawberry Topping:
2 cups fresh strawberries, hulled and sliced
⅓ cup strawberry preserves or seedless jam
1 tbsp lemon juice
2 tbsp powdered sugar
Directions:
Preheat oven to 325°F (160°C). Wrap a 9-inch springform pan with two layers of heavy-duty foil.
Crust: Mix graham crumbs, melted butter, and brown sugar. Press firmly into the bottom of the pan. Bake 10 minutes. Cool.
Red Velvet Batter: Whisk flour, cocoa, sugar, baking soda, and salt. In another bowl, whisk oil, eggs, buttermilk, food coloring, vanilla, and vinegar. Pour wet into dry and mix just until combined. Spread evenly over crust.
Cheesecake Filling: Beat cream cheese until smooth. Gradually add sugar. Add eggs one at a time, mixing on low just until combined. Fold in sour cream, vanilla, and heavy cream. Pour gently over red velvet layer.
Place foil-wrapped pan in a roasting pan. Add hot water halfway up the sides. Bake 55–65 minutes until edges are set and center has a slight wobble.
Turn off oven, crack door open, and cool 1 hour. Remove from water bath, remove foil, and cool completely to room temperature.
Refrigerate at least 4 hours or overnight.
Topping: Combine strawberries, preserves, lemon juice, and powdered sugar. Spoon over chilled cheesecake. Release springform ring and serve.

🥜 Peanut Brittle 😍
Ingredients:
• 2 cups granulated sugar
• 1 cup light corn syrup
• ½ cup water
• 2 cups roasted unsalted peanuts
• 2 tbsp unsalted butter
• 1 tsp vanilla extract
• 1 tsp baking soda
• ½ tsp salt
Method:
1. Line a large baking sheet with parchment paper and lightly grease it with butter.
2. In a heavy-bottomed saucepan, combine the sugar, corn syrup, water, and salt. Cook over medium heat, stirring until the sugar dissolves.
3. Bring the mixture to a boil and cook without stirring until it reaches 250°F (120°C).
4. Stir in the roasted peanuts and continue cooking until the mixture reaches 300°F (149°C) and turns a rich golden color.
5. Remove from the heat and quickly stir in the butter and vanilla. Add the baking soda and stir carefully—the mixture will foam up.
6. Immediately pour the hot mixture onto the prepared baking sheet and spread it into a thin, even layer.
7. Let it cool completely for 1–2 hours, until hard and crisp.
8. Break the brittle into pieces and serve. Store in an airtight container at room temperature. 🥜🍬✨

15 layer chocolate cake ( the kind you cook the frosting on the stove top first)
Old fashioned 14 layer chocolate cake
1 cup shortening
4 eggs
3 cup plain flour
2 tbsp baking powder
2 1/2 cup sweet milk aka whole milk
1 tbsp vanilla flavoring
1 tbsp butter flavoring
2 cup sugar
Icing
3 cup sugar
6 tbsp cocoa
1 cup butter
1 can evaporated milk
Method
3 hours
Sift flour and baking powder...set aside.
Cream shortening and sugar until fluffy.
Add 1 egg at a time, beat well.
Add flour mixture alternate with milk. Beat until well blended.
Stir in vanilla and butter flavoring.
You may use any 9 inch pan.
Use shortening to grease pans and sprinkle with flour. I use Baker's Joy.
Be sure to wash pans after each layers to prevent a build up in pans.
Spread 1/2 cup of batter in pans and bake at 375 preheated oven until lightly brown.
You can put layers on wire rack or clean towels until cool. I just start building my cake as I get them out.
FROSTING l do my frosting first so it can cool down.
Melt butter in a 4 quart sausepan.
Mix cocoa and sugar and evaporated milk.
Bring to a rolling boil. Reduce heat and cook 2 mins. STIRRING CONSTANTLY while cooking. Remove from heat and cool. It will be thin. Spread generously between layers on top and sides of cake.

My grandmother used to make this every December, and the whole house would smell like warm spices and caramelized fruit for days. I honestly thought nobody made these anymore until I found her handwritten recipe card tucked inside an old cookbook last winter. Made it on a rainy Sunday afternoon, and I swear… the second I pulled it out of the oven, I was ten years old again, sneaking slices when she wasn't looking.
This isn't one of those dry, dense fruitcakes people joke about. This one is buttery, moist, and has this gorgeous glossy top that practically glows. The fruit gets all jammy and sweet, the pecans add that perfect crunch, and the molasses gives it this deep, cozy richness you just can't fake.
My husband ate three slices before dinner. No shame.
**INGREDIENTS:**
• 2 cups flour
• 1½ cups sugar
• ½ tsp baking powder
• 1 tsp salt
• 32 oz mixed dried fruit (I used a mix of apricots, dates, and raisins)
• 1 cup chopped pecans
• 3 large eggs
• ½ cup orange juice
• ¼ cup softened butter
• ¼ cup molasses
**INSTRUCTIONS:**
1. Preheat your oven to 325°F. Grease and line a 9-inch round cake pan with parchment paper.
2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
3. Toss in the dried fruit and pecans. Stir until everything is coated in the flour mixture — this keeps the fruit from sinking.
4. In a separate bowl, whisk together the eggs, orange juice, softened butter, and molasses until smooth.
5. Pour the wet ingredients into the dry mixture and fold gently until just combined. The batter will be thick and packed with fruit.
6. Spread the batter evenly into your prepared pan. Press it down gently with the back of a spoon.
7. Bake for 1 hour and 45 minutes to 2 hours, until a toothpick inserted in the center comes out clean and the top is deeply golden and glossy.
8. Let it cool completely in the pan before slicing. The flavors get even better after a day or two wrapped tightly.
Slice it thick. Serve it with coffee. Watch it disappear.
